The Adonis Salad

Ingredients:
1 lb of chicken
1 avocado
3 to 5 oz of fresh spinach
1/4 chopped red onion
1/2 small package of portabella mushrooms
1 handful of broccoli sprouts
A few handfuls of almonds

A few teaspoons of olive oil, balsamic vinegar, lemon
1 teaspoon of mustard
Handful of basil
1/2 handful of pine nuts
1/2 teaspoon of horseradish
1/2 teaspoon of garlic

Directions:

Grill 1 lb of chicken, let it stand for 10 mins, and then proceed to chop up - set it aside.

Chop up avocado, 1/4 of a large red onion, and portabella mushrooms.

Put 3 to 5 oz of fresh spinach, which is generally 1/4 to 1/2 of a bag of spinach, into a bowl.


Add chopped chicken, red onion, avocado, and portabella mushrooms into bowl.


In a food processor or food chopper, put basil, mustard, olive oil, balsamic vinegar, lemon, pine nuts, horseradish, garlic and chop.


Pour dressing on top of the salad.  Enjoy!

randy not adonis: my favorite seafood is Tilapia but I have been missing the "fried" fish crust since I have trying to eat healthy. The wheat germ crust is absolutely perfect substitution.

Dan: As Gianna said, I'm not too big on salads, either. However, everything else that you've created on here I've totally enjoyed. This will make a good meal for tomorrow, which I'm sure to make. Thanks again for the great ideas!

Solomon Gaddam: this salad sounds delicious. it's very low glycemic and has tons of protein. I'm kind of pumped to make it today. perfect for leaning out.

Gianna: Well Pete I really am not a salad person but since ive been trying your other dishes I said what the hell.. And let me tell you this is one of the best salads I have had... I really think you need a healthy cooking show on food network or something.. Keep up the good work... And lookin at your body makes me wanna eat healthy more then ever....
