Grilled Chicken with a Roasted Red Pepper/Mustard Sauce

Wow, this really turned out well.  The sauce that I topped it with was so yummy.

Ingredients:
Fresh Basil
Fresh Parsley
Olive Oil
Balsamic Vinegar
Lemon Juice
Horseradish Mustard
Garlic

Grilled Chicken
Roasted Red Peppers

Dry Herbs (Mrs. Dash No Sodium Seasonings)
Cumin
Cilantro
Dill
Black Pepper
Ground Mustard


Directions:

Chop up fresh basil and parsley and set aside.  In a small bowl/plate pour dry herbs (Mrs Dash, Cumin, Cilantro, Dill, Black Pepper, Ground Mustard). 

Take a brush and dab it in olive oil/balsamic vinegar.  Brush the one side of the chicken breast with the olive oil/balsamic and then dip the chicken into the bowl with the dry herbs.  Place the chicken on a preheated grill.  Once you do this, brush the other side of the chicken with olive oil/balsamic vinegar, and pour rest of dry herbs on top.

While the chicken is cooking, prepare the sauce to top it with.  So, you want to put roasted red peppers into a chopper/food processor.  Put horseradish mustard, olive oil, ground mustard, fresh basil, fresh parsley, garlic, lemon, balsamic into the chopper as well.  Make sure that the consistency is creamy. 

Once the chicken is done, pour the sauce on top of the chicken and enjoy!
