Baked Quinoa Pasta with Cottage Cheese

I hope all of you had a safe and fun New Year's Eve last night.  I'm sure that many of you have made your New Year's resolution to get into better shape in 2009, so what better way than to follow along with my blog, watching training clips, reading through the Q & A, and getting healthy meals to cook at home. 

Here is a quick, and easy Quinoa Past dish, designed for those days when you come home, and want food ready within 30 minutes or so.

Ingredients:
1 package of Quinoa Pasta
1 can of low sodium, low sugar marina sauce
1 package of no fat cottage cheese

Directions:
Cook Quinoa Pasta, strain in a collander.  Spray a pyrex bowl with Pam, and line with the quinoa pasta, top with sauce, then top with cottage cheese.  Do this form of layering until all of the pasta, sauce and cheese is finished.  Cook on 350 degrees for 30 minutes.  Serve hot!

Peter Adonis: Patient - It used to be where you had to go to a specialty store like a Whole Foods or Trader Joes in order to find the Quinoa Pasta, but now my regular grocery store carries it in their health food section.

Patient Perseverance: Quinoa intrigues me. Where do you buy it? It is sold at most supermarkets? I have been using Barilla Plus high protein, high fiber pasta. It tastes great, and the carbs are released somewhat slowly (which makes it a good pre-workout meal). Cheers!
